let's play catch up!

whew... Life is such a roller coaster... some weeks are so relaxing and slow moving and then all of a sudden you are thrust into a week of a million things to do, places to go, and you feel like life won't slow down.  That's the contrast between our last 2 weeks.  

2 weekends ago Ben went to West Palm Beach, FL with guys for his friend Matt's Bachelor Party (seems to be a common occurrence huh?) and I was in town (not at the beach like last time).  Harper and I went & stayed with my parents for the weekend... My mommy and I hung out, went to a movie (Black Swan... whoa crazy movie), watched movies at the house each night w/ my dad, ate delicious home cooked meals, and just RELAXED (I slept in until 10:30 on Saturday! First time I've done that in a long while).  Harper enjoyed playing with my parent's puppy Sam.  I was glad to have the hubby home again on Sunday.  

We had Supper Club last Thursday night with great friends and I was in charge of the dessert....

Seriously, make this dessert!  It was a hit.... so easy and absolutely delicious (apparently on the "better for you" end of the spectrum as far as desserts can be).  I went to Williams Sonoma & bought this trifle bowl just for the occasion (I was surprised I didn't already have one, but I can think of lots of fun things to use it for)!  

Then last Saturday was the American Cancer Society's Chili Cook-off  downtown.  Ben's work has participated in the cook-off the past few years and so he had to be downtown at 4am to start cooking!  I joined them from 11am-3pm and it was such a beautiful day in Mobile.  The weather was great, there were SO many people there, and the chili was delicious (well, I only tasted 3, but all 3 were great... especially Ben's :) ).  My sister, Stephen, and the babies, Ben's parent's, my sister-in-law's family with our niece, Austin & Stephanie... there were so many friends/family there & we had a great time all visiting (& letting the babies play together).  I can't believe we didn't take ANY pictures all day! 

Then on Sunday Ben's whole family met at the farm for a quail shoot.  Ben led Harper (the pointer & the retriever for their hunt), the boys shot, and I took pictures following behind them.  It was the perfect weather.

After we were done and all ate a very late lunch, Ben & I headed straight from the farm up to grandmother's house to spend the night.  Ben had to work out of town for 3 days so I joined him!  We had a great time visiting with Grandmother for the night.  On Monday, Ben worked & I was with grandmother, and when he got done, Ben took his "2 valentine's" to dinner at Cracker Barrel  & brought us both valentine's goodies.  
Tuesday night in Montgomery, Ben & I ate Mexican and then went to 32 degrees yogurt bar.  Oh my goodness, this place was amazing (apparently just like Cold Snap in Mobile).  You pick out your flavor of soft serve yogurt, put as many toppings on it as you want, and then pay for your cup by the ounce.  Ben's was $6 and mine was $3, haha (and my cup was empty by the time I took this picture!).  
And NOW, we are finally headed back home... It's been such a whirlwind of traveling all over the place.  Sometimes it can be fun, and sometimes it's stressful.... but either way, it's not over yet!

Better late than never

mmmm

one of our favorite meals: 
(Yes, this was our Super Bowl watching dinner... instead of pizza, wings, yummy chip & dips, etc):
 Grilled Fish Tacos with Baja Sauce and Black Bean Salad

You can use any number of different toppings, and we switch it up each time, but we went to Publix before this meal so we had everything we wanted:

- Tilapia Filets (lightly marinated/seasoned with whatever Ben threw in there)
- Flour tortillas (my mom uses corn tortillas)
- shredded cabbage (or lettuce)
- diced tomatoes
- diced avocado
- chopped cilantro (as though the baja sauce didn't have enough)
- cheese (i didn't use any this time, but monterey jack would be best)
- sliced red onion (we didn't use this time b/c it's in the black bean salad)
- Baja Sauce (recipe above)
- Lime wedges (squeezed over top)
(Ben tends to put some black bean salad directly in his taco also vs. eating it on the side)

birthday birthday birthday!

Last Saturday (January 29th) was my *gasp* 27th Birthday.  Per usual, it falls on the last weekend of hunting season so we headed up to Ben's Farm on Friday since that's where everyone would be.  My sweet sister-in-law Amy planned all the meals & got me 3 birthday cakes (strawberry, caramel, & Buttercream Dreams)!  My parents got me an awesome new low-light portrait lens for my birthday so I played with it all weekend & never took it off my camera.  
 We also went over to my parents hunting camp on Saturday.  So far they have an awesome red barn & the beginnings of the lake (filling up on the right side of the 2nd picture) but we can't wait to have a fun house to stay in too. :)
After Ben & I sat in the woods for a little while (& saw 12 does) we had birthday dinner (steaks, salad, & potato casserole).  Everything was very laid back & relaxing for the weekend.

 Sunday we came back to Mobile & ate lunch with my whole family.  We were stuffed after a delicious lunch & cake #4 of the weekend (Italian Cream Cake...mmmmm).  I had to get my hands on baby Emory for some birthday sweetness!
Monday night, since we couldn't hang out to celebrate like last year, Austin & Stephanie took us to Felix's for my birthday!  (This is the scan of the picture the restaurant took for us).
The longer the celebrating, the better!  I was just so glad to be over the FLU by the time the weekend came along!  ..... I can't believe I'm 27...... ahhh
